Influence of particle size and bioprocessing on the technological functionality of wheat bran in wheat bread making

Abstract

Wheat bran is nutritionally very important source of DF, vitamins and minerals. However, wheat bran is not commonly used in bread making due to negative influence on dough rheology and quality of bread. The aim of this thesis was to study the influence of bioprocessing (microbe fermentation and enzyme-aided microbe fermentation) of wheat bran with different particle sizes on the technological functionality of the bran in dough rheology and bread quality. In the literature review the influence of native bran, bioprocessing technologies and reduction of particle size of bran on dough rheology and bread quality were discussed. In the experimental part, the influence of bioprocessing of bran (50 - 750 µm) was studied. Bran was bioprocessed in four different ways: 8h fermentation, 8h enzyme-aided fermentation, 23h fermentation and 23h enzyme-aided fermentation. The functionality of the differently bioprocessed bran was studied in bread baking by analysing rheology of dough and quality of bread (specific volume, shelf-life and sensory properties).

When studying bioprocess ability of bran it was observed that the finer particle size of bran, use of enzymes and longer bioprocessing (23h) had a significant increasing effect on the growth of microbes and acidification of bran slurry. The functionality of bioprocessed bran in dough was analysed and it was found that the water absorption of dough increased as the particle size of native bran decreased. Use of native bran impaired the dough development, but the dough development was improved by bioprocessing the bran. The dough stability did not significantly decrease whether the native or bioprocessed bran was used -except if the bran was bioprocessed with enzymes whereupon the stability of dough decreased notably. The CO2 production and retention of bran dough did not significantly differ from the wheat dough.

Addition of native bran at 15% supplementation level decreased the specific volume of bran breads compared to wheat bread. The particle size of bran had a significant relevance to the quality of bread: the best baking quality was achieved with particle size of 160 µm while the particle size of 50 µm caused negative effects on the measured quality parameters. The quality of wheat bran bread was improved notably by bioprocessing and the shorter bioprocessing was equally good and partly even better than the longer bran bioprocessing. The direct enzyme addition to dough did not improve the specific volume of bread. However, bioprocessing of bran increased the specific volume of bread notably. In general, shelf-life was better in wheat bran bread than in wheat bread. Shelf-life was improved by adding the enzymes directly to dough or by bioprocessing the bran in advance. Addition of the bran in bread caused coarser and less elastic mouth feel, and by bran bioprocessing, the texture properties, but also flavour and crumb colour of bread were changed. The work proved that the quality of wheat bran bread can be improved by reducing the particle size of wheat bran and by bioprocessing the bran.

Vehnälese on ravitsemuksellisesti tärkeä ravintokuidun, sekä vitamiinien ja mineraalien lähde. Vehnälesettä ei kuitenkaan yleisesti käytetä leivonnassa, koska se heikentää huomattavasti taikinan ja leivän laatua. Diplomityön tarkoituksena oli tutkia vehnäleseen partikkelikoon ja bioprosessoinnin, eli mikrobi- ja entsyymiavusteisen prosessoinnin, vaikutusta korkeakuituisen taikinan reologiaan ja leivän laatuun. Kirjallisuusosassa tarkasteltiin vehnäleseen, bioprosessointiteknologioiden ja partikkelikoon vaikutuksia taikinan reologiaan ja leivän laatuun. Kokeellisessa osassa tutkittiin bioprosessoinnin vaikutusta leseeseen (partikkelikoko 50 - 750 µm). Vehnälesettä bioprosessoitiin neljällä eri tavalla: 8h fermentointi, 8h entsyymiavusteinen fermentointi, 23h fermentointi ja 23h entsyymiavusteinen fermentointi. Näiden eri tavalla prosessoitujen leseiden toimivuutta tutkittiin leivonnassa analysoimalla taikinan reologiaa ja leivän laatua, kuten leivän tilavuutta, säilyvyyttä ja aistinvaraista laatua.

Tutkittaessa leseiden bioprosessoitavuutta havaittiin, että vehnäleseen pieni partikkelikoko, entsyymien käyttö ja pidempi käsittelyaika (23h) lisäsivät huomattavasti mikrobien kasvua, sekä lese-vesi -seoksen happamoitumista. Analysoitaessa bioprosessoidun leseen käyttäytymistä vehnätaikinassa huomattiin, että taikinan veden absorptio kasvoi, kun käsittelemättömän vehnäleseen partikkelikokoa pienennettiin. Käsittelemätön vehnälese heikensi taikinan muodostumista, mutta leseen bioprosessoinnilla pystyttiin palauttamaan taikinan muodostuminen vehnäleivän tasolle. Käsittelemätöntä tai bioprosessoitua vehnälesettä sisältävän taikinan stabiilius oli vehnätaikinan luokkaa, lukuun ottamatta taikinaa, jossa oli bioprosessoinnin aikana käytetty entsyymeitä, jolloin taikinan stabiilius laski merkittävästi. Vehnälesetaikinan hiilidioksidin tuotto ja pidätyskyky eivät merkittävästi eronneet vehnätaikinasta.

Käsittelemätön lese 15 %:n lisäystasolla heikensi leivän ominaistilavuutta verrattuna vehnäleipään, johon ei lisätty lesettä. Vehnäleseen partikkelikoolla oli selkeä merkitys leivän laadun kannalta: 160 µm vehnälese antoi parhaimman tuloksen, kun taas 50 µm vehnäleseen lisäys oli negatiivinen työssä mitattujen laatuominaisuuksien kannalta. Bioprosessointi paransi leivontalaatua ja lyhyempikestoinen 8h bioprosessointi oli leivontalaadun kannalta vähintään yhtä hyvä, osin jopa parempi, kuin pitkäkestoinen 23h bioprosessointi. Entsyymien lisääminen suoraan taikinaan ei parantanut leseleivän ominaistilavuutta, mutta leseen bioprosessointi ennen leivontaa paransi tilavuutta merkittävästi. Leivän säilyvyys oli yleisesti merkittävästi parempi leseleivässä kuin vehnäleivässä. Leivän säilyvyys parani huomattavasti, kun entsyymit lisättiin suoraan leseleipätäikinaan tai vehnälese bioprosessointiin ensin. Leseen lisäys leipään aiheutti karkeamman ja ei-elastisemman rakenteen leivän sisukseen verrattuna vehnäleipään. Bioprosessoinnilla pystyttiin muokkaamaan leseleivän makua, sisuksen väriä ja rakennetta. Työ osoitti, että leseen partikkelikokoa muokkaamalla ja bioprosessoinnilla leseleivän laatua voidaan parantaa.
